Clean up serializer docstrings

Now that we entered the Spectacular era, serializer names and docstrings are now shown in the OpenAPI documentation, leading to… interesting docs.

Many docstrings are useless (they look like they could be generated by an auto doc tool!) or obsolete (the zone serializer says it has a center, but it no longer does since the PostGIS era).
