Support worker version in CreateTranscriptionEntity

This is not supported, and the information is lacking for the integration in LabelStudio

• You can set the worker_version id in the unique_together constraint. This would prevent a duplicate by the same user (none) or worker, on the same exact tuple (transcriptio, position, entity). If a second user wants to redo the same transcription+entity, it's an approval.
• You can also set the default worker version in the migration to the one used on the linked entity (if any)
