Fix the current version of the code with a Gitlab Tag

We will start a big refactoring work in the next weeks. We need to pin the current version with a tag in case we need to go back to it.

Maybe v1.x could be enough?

Update the README as well to mention that this version is the latest stable and the one that should be used while the refactoring is still going.
