Remove custom templates in doc setup

We don't use any custom_templates but the key is still present in the MKdocs configuration file.

We should remove it, it crashes in CI for later version of mkdocstrings. (See https://gitlab.teklia.com/workers/base-worker/-/jobs/521851#L328)
