By some act of black magic, overriding the operation_id alone is enough to suddenly cause Spectacular to come to its senses. I have no idea why. While I'm at it, I also documented the id parameter, since it can be quite unclear what ID it actually is; /api/v1/process/files/<id>/ sounds like it could have been the files selected in a process instead of the files in a corpus.
