Revert entities source selection to select (instead of radio)

After discussion & trials by the team, they would rather prefer we stick to <select> to stay consistent with other panels (and avoid large lists):

revert to select
display by default the LAST TranscriptionEntity created (might be possible if the entities are preloaded ?)
OR display by default the first worker version in the list
keep the "no entities"
